THE SNACK-SIZED FORMAT

Not all grapes are born equal.

Some grapes will be taken from the vine and eaten, perhaps by a child playing in the vineyard. Others will be picked by people who do this for a living, with care and skill, so that the bunch may eventually be presented in its perfect packaging in a glamorous supermarket far away. Some will be destined for the long and sophisticated process of becoming an exquisite wine, the pride of some gracious host, years into the future.

And then some, a select few, will become Chilean Flame raisins, will be soaked in port until they are saturated, macerated - and ready for the final performance of their lives; even the crowning moment of their kind of fruit: when they are carefully blended into freshly tempered superior dark chocolate. When they become Ilze's Flame Raisins and Port in a dark chocolate bar.

Yes, these spectacular chocolate bars are now also available in the 95g format. Yes, they are vegan. No, they are not alcohol free!

THE SNACK-SIZED FORMAT

Last week we launched the first of our snack-sized chocolate bars online. Today it is the turn of the first dark chocolate bar, with caramelised hazelnut and caramelised orange . Although this is not a new recipe for us, we have thus far not offered it in the 95g format. This smaller format appears to be more popular today, and it is made with a typical chocolate bar block pattern at the bottom, so that you can easily break off smaller pieces for sharing, or to spread the enjoyment over a longer period.

Our dark chocolate contains minimum 60% superior quality cocoa mass. We have sourced from many different suppliers and countries and this particular chocolate continues to stand out for us because it is has a great taste without overpowering the fruits and nuts that we use with it.

Caramelised oranges are so good with dark chocolate! We slice the fresh oranges and caramelise them over a period of several days before they are ready to be put onto the dark chocolate bar. On their own they would already have produced a great companion for the chocolate bar, but with the hazelnuts they form a perfect troika!

The hazelnuts are roasted and caramelised with sugar and cocoa butter to enhance their nutty taste. And because we are using cocoa butter and not dairy butter, the product is also suitable for vegan diets.

But having made sure that our chocolate bar is perfect for those who prefer diary free and vegan, we also have to cater for those who prefer milk rather than dark chocolate. And so we also launch today the milk chocolate version of this bar. The same caramelised orange and hazelnut, but with milk chocolate.

And again, we have been very careful to source an excellent quality milk chocolate with minimum 42% cocoa solids.

All of which means that we have now launched, in the snack-sized format, a white chocolate, dark chocolate and milk chocolate bar. So there will be something for every taste in chocolate; but we are planning to launch more of these chocolate bars, so watch this space!

The Snack-sized format

There is nothing like a bar of good chocolate to enjoy on your own during a snack-break in the middle of the working day, or to share in front of the television at night. But today's chocolate lover often wants to find a snack that is still the real thing, yet will not leave you feeling guilty about the calories that you have added to your daily count.

While many marketing messages would suggest that we should go for snacks that are low on calories but equally low on taste, our belief is that the real answer lies in smaller portions. Isn't it so much better to have a real chocolate experience with a smaller portion than to waste calories with a larger portion of something that tastes only slightly better than sugared card board?

So in order to support you in your drive towards "smaller but more beautiful", we will be launching a range of chocolate bars in a new 95g format. Still a substantial snack, truth be known, but if you share it, it will leave you much more satisfied that you had a good experience without too much impact on your diet.

The first 95g format snack that we are launching today is a white chocolate bar, infused with strawberries . We have done this infusion ourselves, for four days in a wet stone grinder. So you can be sure that nothing other than the real white chocolate and the strawberries went into this bar. We then added real freeze dried strawberries. No, not just skin deep, but real pieces of strawberries that were pushed into the chocolate to add some texture and additional strawberry flavour when you bite through.

AFTER LOCK-DOWN, WE ARE ACTIVE AGAIN ON ALL FRONTS!

Well, we have never been totally locked down, because we continued to do internet orders right through the lock-down period. And in fact, many of our customers used Ilze's gift boxes of macaroons or chocolates to send to friends and family as an encouragement during difficult times, complete with a card from our selection and a hand-written message of encouragement.

The good news is that we continue to provide this service and we have birthday cards, as well as an array of other celebration cards that you can send out with these gift boxes whenever you want to reach out to someone special in your life.

More good news is that all our products are again available online from our website and we have introduced easy-to-use store front pages for all our macaroons and chocolate products . You may have to scroll down to find what you are looking for, but you don't have to jump from page to page.

In the meantime, our local business high street shop in Eastcote has also re-opened for take-away, for pick-up of online orders and with limited seating if you want to enjoy something to eat and drink in. The opening hours are shorter and weekdays only, but we also have an alternative pickup service from Northwood for those who find the shop hours too limiting. The shop has been re-organised and safety equipment and measures introduced to protect you and our staff, in accordance with a risk analysis that we performed using Government guidelines.

With many people now working from home, we find that there is a demand for our light lunches and of course our popular artisan coffees. If you are in the area, please do pop in and check what we have available. We are planning to try out a service where you could order your lunch treat online for pickup in the shop. This will hopefully make the visit to the shop shorter if you have to get back to your homeworking.

I want to buy macaroons in a large quantity - is there a discount? And how quickly can I get them?

Buying macaroons for weddings, parties, corporate gifts or for any purpose that makes a bulk order necessary

Many of our customers call to inquire about volume orders. There could be a range of reasons, but the most common one is a wedding or a special event, where French macaroons would lend extra colour, flavour or style to the occasion.

We always point out that our macaroons are not machine-made; every one is lovingly prepared in our kitchen by real artisans. And each order is prepared individually for the customer who placed the order. We do not prepare your order from frozen macaroons, such as some other well-known brands do in the UK. That is why you will be able to taste the difference and experience the freshness when you bite into them. That is why it is important that you contact us as early as possible with your request.

For large orders, we do offer two discount levels: for more than 40 macaroons (2 gift boxes) of the same kind or more; and then for more than 100 macaroons (5 gift boxes) of the same kind or more. These discounts are available on our Gift box of 20 Macaroons - Mixed Flavours , or on any Single Flavour Gift Box of 20 Macaroons - and there are more than 20 flavours to choose from!

So how do you get the discount? Very simple: you specify the number of gift boxes of 20 that you need, and the discounted price will be applied automatically. For example, if you need 200 macaroons, select 10 boxes of your chosen flavour and the discounted price will be displayed.

One other point: For large orders, it is better to order well in advance and to then specify the date by when you need the macaroons. This can be done on our website in the following way: When you are requested to state the delivery method, choose "Reserve delivery for a specific future date: Enter required date under ORDER COMMENTS on next page". Don't forget then to enter the date that you want the macaroons on the following page.

Nevertheless, if you need your large order of macaroons quickly, and you place your order early in the morning, we are able to deliver the same evening or early the next morning in most areas within the Greater London region. This delivery option will be displayed automatically for large orders where you have specified an address within the eligible zone. Also do consider the option of picking up your order from our shop in Eastcote, HA5. Who knows, you may find some amazing chocolate at the same time! For this option, simply select "In-store pickup" as your delivery method, and you will be asked to specify the time and date of pick-up.

Macaroons for Christmas?

Macaroons remain as popular as ever and this Christmas season we expect that they will be given as gifts, or be used to add that special touch to many celebration tables. But of course macaroons have to be enjoyed fresh if both the vibrant taste and the delicate texture are to be preserved. So how can you ensure that your macaroons will arrive at just the right time?

This year, we will be using Royal Mail's "Guaranteed by 1pm Next Day" delivery option for orders that are placed on our website for delivery on a specific date. While this option is slightly more expensive, it will ensure that if you ask for delivery on a specific weekday, you can be confident that it will arrive, despite the normal high demand for deliveries during the busy season. To choose this option, all you have to do is select "Reserve delivery for a specific future date" as your delivery method during checkout, and add on the next page the date on which you want delivery to take place, under "ORDER COMMENTS". We will do the rest!

By the way, if you want us to send the product off to someone else, it gets even better: We will hand-write your message on a card of your choice, add gift wrap, and send it off to the recipient without you having to do anything further! How do you do this? Visit our Greetings Cards page, where you can select a greetings card to go with the gift and enter the message that you want us to hand-write in the card.

Share your photographs of our macaroons or chocolates

The original inspiration came from artist Jurga Luca , who not only became a very loyal customer at Ilze's Chocolat, but who also proceeded to share some stunning photographs of our products on social media. The photograph above is a recent example. Others followed her lead and we slowly realised that actually many of the people who enjoy our products, want to share the experience visually.

So towards the end of last year we made an invitation on Twitter that people should share their photos and we promised that we will reward the one with the most likes. However, there were three flaws in our logic:

First, we used one of Jurga's exceptional photos as an example, which perhaps set the bar too high and maybe some people did not want to try and match her outstanding quality. Well, the good news is that Jurga is not taking part in the competition! In stead, we will be using some of her art in our high street shop that will be opening soon (more about this later!).

Secondly, we were quite unclear about the rules of our little competition, which was equally unhelpful. And thirdly, we started the competition just as our peak Christmas trading season started, which meant that we did not have the time and energy to follow through.

And then, encouragement came from quite an unexpected source! Lisa Butterworth of Colour Box Marketing referenced our competition in a blog on 8 Marketing Ideas for Small Budgets . Well, if a marketing expert such as Lisa thinks it is a good idea, we are not going to argue.

So here then are the rules: Tweet us a nice photo of our macaroons or chocolates to @ilzeschocolat and we will re-tweet it to our followers. The first photo that attracts 10 likes will earn a gift box of 20 macaroons or 24 Signature Range chocolates from us. Then, the next gift box will go to the person whose photo attracts 20 likes, then 30, then 40, etc. Let's keep it simple like that.

So if you want to be a winner, send your photo in early! Of course it will also help if you get your friends to start following us and liking your photo ;-)

Chocolate and Macaroon Activity Days

Now that the summer season is about to start, most of us are looking for things to do outside of our normal workplace, activities that would perhaps develop a new skill, provide relaxation or create a setting for friendships to develop. And what better way to achieve all three those things than to participate in a chocolate or macaroon workshop!

Ilze has been offering chocolate and macaroon workshops for several years, with great success. The formula is very simple: the workshops are usually held on a Saturday in Northwood, Middlesex, and numbers are limited to no more than 6 to 8 at a time. That way, there is enough space and time for all to be able to actively participate and to received personal assistance in the learning process. And of course, it would be hard to fit more people around a normal dining room table!

So how does this work? Usually we start at 10 am on a Saturday with a cup of tea or coffee and an introduction to what would be done on the day, as well as an explanation of the recipes that would be used. We then go through the preparation steps together: we will show you and you will actively participate. The setting is relaxed; no competition, no rush. If we are not able to have a good conversation while we are working, we are probably going too fast! Somewhere around 2 pm, we break for a sit-down lunch; usually by that time most students welcome the opportunity to relax over a meal!

For the chocolate workshop, we will also include a basic tasting session, to sensitise your taste buds to the important differences between "real" (couverture) chocolate and the more inferior "bake stable" chocolate products. We also want to make you aware of the different "tastes" of the chocolate and how you can use it in the preparation of fillings (ganaches) for our chocolates.

Finally: whatever you make during the workshop, you get to take home!

In the past, we have often had to "close shop" early, disappointing some of you. To avoid that this year, we offer you a 10% discount if you place your orders for our gift boxes of macaroons or chocolates before 7th February, and specify a dispatch date for the week before Valentine's Day.

Valentine's Day: sorted!

There will be many mass produced chocolate products on offer as Valentine's Day approaches. But, as always, the really memorable gift will be one that is exclusive and that says: "I have put some thought into selecting this gift".

Our chocolates are handcrafted and because of that, only a certain volume can be produced for a special event such as Valentine's Day. And because we do not use preservatives, we cannot make them and stockpile months in advance. However, we now have the website functionality that allows you to pre-order and effectively book your special Valentine's gift early, such that we can schedule the preparation of your gift now and ensure that there will not be any disappointment.

So how should you do this? First, you should select the special gift that you want to give. Here are some suggestions. Once you have picked your gift, go to the " Gift Cards, Wrapping and Delayed Shipping " page in our webstore. Here, you can select one of our gift cards if you want (we will write your message on the card by hand), or choose to have a message written on our complimentary card, or you can leave out the card. Once you have decided about the gift card option, you will then be presented with the opportunity to select the date upon which we should dispatch your gift.

Bear in mind that dispatch date is not the same as delivery date and so you have to allow time for delivery. If you want to ensure that the gift will be delivered on Valentine's Day, we would suggest that you select 13th February as dispatch date, and then select the next business day delivery option during checkout.

I need a special chocolate or macaroon treat once a month

Ilze's Chocolat have a substantial number of regular customers, people who frequently place their order for a special chocolate treat or for macaroons. Of course we appreciate these customers very much and we feel that we want to give you something in return. That is why we have created the "my treat" concept. With "my treat" you will get a text message reminder to order your special monthly treat, and with a simple tap on the link on your smartphone you will be taken straight to the treat on special offer.

So what do you have to do? Go to our " My Treat " page and register your interest. You only have to tell us which week week of the month you would like to receive a text message from us, and then proceed through the checkout as normal, remembering to add your mobile phone number during the secure checkout process. There is no cost involved in registering! We will then send you a text message during your chosen week every month, to tell you which products are on special offer for you that month and you will be given a coupon code for your exclusive use.

Then, if you enter the coupon code during checkout, the discount will be applied to your purchase of the product(s) on special offer. Here is how it works: When you choose a box of chocolates or macaroons from Ilze's Chocolat, you can leave all of the work of preparing the gift and getting it to the recipient, to us. We will wrap the gift in the wrapping paper of your choice, we will write your message to the recipient by hand on the card of your choice, and we will dispatch the gift to the address that you specify, without including an invoice or indication of the price. All you need to do is give us the instructions, choose the options and the gift card, and we will take care of the rest. And it is all done with care and by hand!

We have now even added some cute message cards (for example, "A Little Something To Say Sorry") that you can select, and that we will attach to the gift box.

We are proud to announce the eighteenth "child" in our macaroon family! We are constantly thinking of new flavours that our clients would enjoy and this launch makes us quite excited - we cannot wait to hear your feedback!

Ilze is particularly fond of citrus fruit, from the time when she was picking oranges and mandarines (we referred to them as "naartjies" in South Africa) as a child in the orchard of the farm on which she grew up. For her it has a more distinctive taste than an orange and she felt that she could capture it very well in a filling for a new macaroon. ( Wikipedia points out that there are actually two ways to write the name of this delicious citrus fruit: both "mandarin" and "mandarine" would do. We opted for mandarine, which not only distinguishes the fruit from the language, but also somehow is more consistent with the spelling of tangerine, which is a related fruit.)

Because Ilze was introduced to a wide variety of fruit from an early age, she developed a real love for fruit and always felt very strongly about capturing "real" flavours and not chemically derived imitations (even if it means that our products have a shorter shelf-life).

With this addition we now have eight macaron fruit flavours, namely blueberry, apricot, lemon, raspberry, mango and orange, passion fruit, strawberry and mandarine.

Which are our most popular flavours, you might ask? As always, this is a very personal thing and some flavour preferences are "seasonal" or more popular for occasions such as weddings. Chocolate and Hazelnut are "warmer", comfort tastes, and therefore might be more popular in winter, while "sharper" flavours like lemon could be more popular during warmer months. Nevertheless, from what we see other clients select, we could suggest that you include the following flavours in your selection: Raspberry, Rock Salt, Vanilla, Hazelnut, English Toffee, Lemon and Pistachio.

Having said that, as we are now experiencing the first chills of winter, a fruity flavour may be just what is required to take you back to those glorious summer days, so why not try the Mandarine?

How can I be sure that my French macaroons will be fresh when they arrive?

Somewhat surprisingly, many prospective buyers are still calling or writing to us to ask about ordering macaroons online, even after we here at Ilze's Chocolat have been serving satisfied customers online for years.

Nevertheless, we can understand the concern of people that ask such questions: Real French macaroons, or as some prefer, macarons, need to be enjoyed fresh, have to be refrigerated and they are extremely sensitive to rough handling during dispatch. If this sounds like an impossible mix of requirements, we are confident that we have now put the required amount of energy and effort into addressing the requirements and we very rarely get any feedback of damage or spoilage of any kind.

So what are the important ingredients of what we do to ensure that you get your macaroons fresh and in good condition?

Firstly, we make our macaroons on order. That means that we do not fulfil from stock that we keep in the fridge or anywhere else. That means that if you place your order after 10 in the morning, we are not able to send your order off the same day. But of course, for the assurance that you get them fresh, you will probably make sure that we get that order by 10.

Secondly, we use only the choicest ingredients, ingredients that we have proven will deliver the best macaroons. And we do not try to extend their shelf life by adding preservatives that would affect the taste. In fact, we do not add preservatives at all.

Thirdly, we refrigerate them and then seal them in packaging that would keep the temperature during the time that they travel.

And talking about packaging, it took us a long time to find packaging that is both secure and funky. We performed our own "drop tests", and tested Royal Mail by sending numerous parcels to ourselves. And we were only satisfied once we succeeded in getting EVERY package right, EVERY time. Which means that it takes some extraordinary bad handling for the macaroons to arrive damaged.

And then there is the actual sending of your parcel: We use Royal Mail tracked services, which means that we are able to track the progress of your precious parcel until it arrives safely in your hands.

Is it worth all this trouble? YES, every time we get a satisfied customer giving us positive feedback, we know!
